“Mint chocolate chip” ice cream cone cupcakes!

Well, This one has no occasion besides that i wanted to try out a new recipe! I have been looking around for a good Vegan Vanilla cake thats moist and DELICIOUS and i came across one this morning that i just had to try out. It came out pretty good but not GREAT so i’m still looking but overall i would try it again with some tweaking. Do you have any good vegan cake recipes that ARE NOT chocolate??  Anyway I made the batter following instructions and placed 12 ice cream cones in a cupcake pan.  I filled the cones 2/3 rd’s full with batter and baked them for 23 minutes at 350*.  I made buttercream frosting and added chopped up pieces  of chocolate chips and dyed the icing green with kelly green wilton gel.  I used the 1M swirl again because it gave the best “soft serve effect” of all the tips i have.

Originally i loved photographing them on the contrasting background but in the end im really starting to like the green.  it just matches so well!!Green
